Job Description Step into a key leadership role at Pullman East Melbourne, overseeing the bar experience for Cliveden Bar and Sanctum. As Bar Manager, you will own the creative direction of the cocktail and beverage program, lead and develop a passionate bar team, and deliver a premium guest experience in two of East Melbourne’s most vibrant hotel bars. This role offers genuine autonomy, a high‑profile platform during major Melbourne events, and strong support from an experienced Food & Beverage leadership team to bring your ideas to life. What you’ll be doing Leading daily bar operations across Cliveden Bar and Sanctum, ensuring elevated, efficient and engaging service. Designing and evolving a market‑relevant beverage offering, including cocktails, wine, beer and spirits. Coaching, rostering and developing the bar team to deliver consistent standards and a great team culture. Managing stock, costing and supplier relationships to optimise profitability and minimise waste. Acting as a visible host, building rapport with guests and maximising revenue during key trading periods and events.
