Oversee daily culinary operations in the retail food division, ensuring high-volume production meets quality standards across both event-day and non-event-day service Lead kitchen operations including menu preparation, cooking execution, and consistent delivery of food quality and service Maintain food safety plans and ensure compliance with HACCP accreditation standards Support departmental success by managing budgets, controlling food costs, and coordinating with suppliers to source high-quality ingredients Collaborate with the Executive Chef, General Manager, and other leaders on menu development, guest feedback, and service improvements Foster team development by mentoring and motivating staff to uphold standards and deliver exceptional culinary experiences More about you Appropriate culinary qualifications with demonstrated leadership experience managing large kitchen teams in high-volume or premium commercial environments Proven ability to manage food and labour costs, including menu development, costing, and inventory control Strong background in ordering procedures, cost controls, and invoice handling Proficiency in stock management and business technologies such as stock control systems, spreadsheets, and accounting tools Excellent communication skills for effective interaction across all levels Passion for food and hospitality, with a collaborative approach in dynamic team settings Who we are With a capacity of more than 100,000, the MCG is the largest sporting stadium in the Southern Hemisphere.
