Restaurant and Bar Manager — The Rocks, Sydney

Description Collaborating closely with the Food & Beverage Manager, we are seeking a dynamic Restaurant & Bar Manager who is charismatic, strategic and a savvy operator to develop, implement and lead Sydney’s newest and exciting hotel dining concept. As a hands-on leader, you will oversee a dedicated team and possess a deep understanding of providing exceptional food and beverage service. With a strong focus on understanding how to grow the business to exceed budgeted revenue, continual training for our team that will provide a truly unique and premium dining experience. You will possess a can do attitude with a strong level of leadership with outside the box thinking that leads from the front, mentors, guides and builds our team to achieve greatness. The Restaurant & Bar Manager with report to the Food and Beverage Manager who will provide them with ongoing leadership, mentoring and development. Responsibilities: Develop and recruit a high performing team ahead of the venue opening Effective development of the service team to meet and exceed business objectives through individual and team performance (product knowledge, job-related tasks) Stay ahead of industry trends and reflect and implement these changes with the venue, enhance the guest experience, service standards and product presentation across wine and beverage Establish and adhere to effective stock management processes and cost control procedures Evaluate and cultivate supplier relations, product acquisition, and brand partnerships, from a local perspective, with global in mind Build and manage strong with key stakeholders, key supplier; curate and develop a community of locals and regulars within, and around business, with optimal growth in front of mind Inspire the team to deliver exceptional dining experiences and maximise revenue Accurately project and manage forecasted revenues and labour costs in line with set financial budgets Work closely with Restaurant Head Chef to provide insight and ideas for our menu development Will work closely with the Director of F&B F&B Manager to implement ongoing collaborations and activations within the venue Curates a positive culture within the venue and motivates the team to achieve success Maintains POS configurations and work flow About You: Minimum of 3 years’ experience in a senior restaurant & bar management in a high volume premium dining role You will have been tried and tested in high volume premium standalone restaurants and hotel environments with a clear understanding on what the recipe to success is WSET or CMS qualification or equivalent an advantage Strong commercial and financial acumen A passionate restaurant operator Strong understanding of Sevenrooms reservation platform (highly preferable) Understanding of Micros Symphony POS Must have full Australian work rights The Perks Discounts on hotel rooms including all properties within the Marriott International group Discounts on food & beverage across all our hotels Recognition programs to keep you motivated Opportunity for involvement with future venue openings across our ambitious growth plans Training and development from some of the best leaders in Sydney hospitality An opportunity to be part of truly landmark venues in the future of the Sydney dining scene We are an Equal Opportunity employer and recognize that true diversity includes gender, age, race, disability status, sexual orientation, religion, neurodiversity, education levels, and many more aspects of your identity.
