Bar Manager — The Rocks, Sydney

Eve's Bar, is a small street bar with big heart that is serving up craft beers, clever cocktails, and great quality food conveniently located near the bustling Railway Square. We are looking for an experienced Bar professional to bring their skills to Eve's Bar and join Mercure Sydney in a leadership position. We want someone who's willing to work hard and have fun at the same time, delivering welcoming experiences that guests crave. Answering directly to the Food & Beverage Manager this is a hands-on leadership role that will take ownership of the Eve's bar outlet. Set and maintain standards that will keep us ahead of the trend Manage a number of gaming machines in the lounge Develop engaging & innovative dining experiences Liaise with the marketing team to promote the bar Empower the team to animate the food & beverage experience Recruit, manage, train, develop and inspire a team of hospitality superstars Be knowledgeable of and operate within appropriate restaurant and hotel liquor licensing guidelines, house management policies & food safety standards Establish procedures, processes and accurate information that support key financial objectives, manage department budgets and keep accurate records Qualifications Responsible Service of Alcohol (RSA) Responsible Conduct of Gambling (RCG) Minimum of 2 years of relevant leadership experience in a food & beverage outlet Strong knowledge of a variety of beverages including beer, wine, spirits & cocktails Knowledgeable of and operate within, appropriate hotel liquor licensing guidelines and policies.
