Group Bars Manager — The Rocks, Sydney

One of Sydney's most rapidly expanding and exciting hospitality groups is looking for an experienced Group Bars Manager. We are pleased to offer this exciting opportunity for a Group Bars Manager to join the pre-opening team for what will be one of Sydney's most innovative and luxurious venues to open in years. Part of a fast-growing hospitality group, our client is well-funded and has spared no cost in the fit out this exceptional CBD venue. The role: Design and develop inspiring cocktail and beverage menus in line with the group’s concepts and identity. Oversee day-to-day bar operations, including inventory management, ordering and stock control to ensure an efficient and cost-effective operation. Recruit, train, mentor and motivate a team of talented bartenders and bar staff, fostering a culture of excellence, creativity, and teamwork. Develop and implement group wide SOPs for bar staff to enhance product knowledge and service skills. Set and achieve revenue targets, working closely senior management to develop annual budgets, forecasts and financial plans for the beverage department. Collaborate with Venue Managers and Head Chefs across the group to ensure consistency and alignment of beverage programs with overall brand strategy. Candidate profile: Minimum 5 years of experience in a senior or group bar management role, from a premium hospitality environment. Proven track record of developing and executing innovative cocktail and beverage programs - Japanese-inspired concepts highly advantageous. In depth knowledge of spirits – particularly whisky, as well as proficiency in classic and contemporary mixology techniques. Strong leadership and interpersonal skills with the ability to inspire and motivate a diverse team. Commitment to delivering exceptional guest experiences.
